Benefits of Dandelion


What is yellow and green
Grows all around, 
Can be eaten entirely
Provides us with fun
 Looks pretty
and
is Determined to stay? 

Dandelion

By most, this is considered a weed. We consider them as that annoying plant that is usually found between the cracks of a sidewalk or laying comfortably in a yard or on your lawn where it's unwelcome. For years people have visited hardware stores in search of a weed killer - but believe me these provide more good than harm. The unconventional attitude towards Dandelions is of nutritional value and its prized medicinal properties.



The Look:
Seed head  a.k.a  Sparkly Wishes (as my nephew calls them)
This is a matured flower head. It takes the shape of a sphere containing many single-seeded fruits attached to  fine hairs. This is how dandelion spreads itself.
Flower head & bud*
These are yellow (to orange) in nature. The petals forming the head are arranged in a dome shaped manner.
Stem*
Hollow stem consisting of a milky sap. Stems don't branch off - each stem solely holds one flower head.
Stems can grow 5 - 70 cm long.
Leaves*
It's all in a name! Dent-de-Lion (Lions Tooth) resemble the jagged edged leaves that taper at the tip. They usually lay flat to the ground and are formed in a circular arrangement (rosette). Unlike some other plants mistaken for dandelion, leaves of dandelions are hairless . The rosette can hold as much as ten stems.
Root* 
Dandelion leaves & stems grow from a taproot. This root type grows vertically down, tapering at the end forming a center where secondary roots sprout laterally.


*The Edible Parts:
Thus far I know that the leaves, roots, flowers & flower buds are edible parts of the Dandelion. I've seen a couple of cases where the stem was eaten or used for it's milky sap externally. The puff on the other hand I'm not sure (although the puff doesn't seem like a palatable candidate)

  • Laxative - Stimulates or facilitate evacuation of the bowels.
  • Aperient - Used to relieve constipation.
  • Choleretic - Increases the volume of secretion of bile from the liver

Culinary Uses
**  Before consumption of the Dandelion plant, Verify that the dandelions have not been treated with chemicals. Avoid eating any chemically treated plants - they are dangerous to your health. 
** Make sure leaves, flowers & roots are thoroughly cleaned before use.


Dandelion Lemonade

8 cups Dandelion flower
3 L Water
4 Lemons Juiced
Fresh Honey


Add dandelion flowers to a gallon or pitcher
Mix in the water & add the juice of the 4 lemons
Add fresh honey to taste & Chill.
Flowers can be left in lemonade or strained before serving

Speaking of dandelion drinks check out dandelion beer & dandelion wine or dandelion liqueur: Dandelion flower -  half cup of sugar - a long strip of lemon peel – vodka Prepared as the tincture!!

Dandelion tincture:
Dandelion Leaves / Roots / Stems / Flower / Flower Bud
75% - 100% Alcohol (not rubbing alcohol)

Wash, then chop Dandelion (All parts can be combined or used separately)
Pack tightly into jars until full
Pour in alcohol to fully submerge chopped dandelion & Snap a lid on
Each day, make sure dandelion parts are submersed in alcohol
In six to twelve weeks, strain out the dandelion pieces and put the finished tincture into jars.
Take a few drops daily in water as a tonic for good health!

Dandelion Vinegar – prepare same way but with cider vinegar instead of alcohol – Leaves or flowers can be used

Oven Roasted Root Vegetables

Whether it be next to a chicken or roast beef or even steak, Roasted root vegetables are always good.

Why not introduce a new root to this medley of roots.

Now it’s not just carrots, & potatoes that you can use, but even Dandelion roots.

Breaded or Battered Dandelion Flowers

Dandelion Flowers
Batter / Bread / Tempura / Crushed Cornflakes
Desired spices

Wash Dandelion flower heads & pat dry
Prepare batter (you can find many types of batter – the simple flour & beer batter, or you can try bread crumbs, tempura crumbs or a batter that is later coated with cornflakes or crackers.)
Spices of choice can be added to batter mix
Toss flower in batter
Deep or pan fry.

Dandelion Jelly
2 cups dandelion blossoms
1 quart water
1 package (1-3/4 ounces) powdered fruit pectin
5-1/2 cups sugar
2 tablespoons orange or lemon extract
Directions
 Boil dandelion blossoms & water (4 min) then strain.
 Combine dandelion liquid and pectin. - Rolling boil, stirring constantly. Add sugar; return to a full rolling boil. Boil for 1 minute; stirring constantly.
Remove from the heat; add extract. Skim off foam. Ladle hot mixture into hot sterilized half-pint jars, leaving 1/4-in. headspace. Remove air bubbles; wipe rims and adjust lids. Process for 5 minutes in a boiling-water canner. Yield: about 6 half-pints.


Dandelion Soup or Stew

Soups & Stew is also a great way to enjoy this medicinal plant.
As with the salad, all parts can be used in the soup (although the flowers may fall apart)

Also remember that dandelion doesn’t have to be centre stage in your dish. If you’re just starting out with this plant, then try to incorporate it into your foods as complementary to the main food in the dish and then expand from there. Get your palate used to the taste.
Salad

Options are endless with this great plant.  Roots, Leaves & Flowers can all be used here. And options as to what to mix them with are all upto your taste buds.

I usually always go with a lemon/garlic base for the dressing. (I feel it goes best with dark leafy greens). But, so as to not get bored of the same dressing, I incorporate other things to this base (Spices or Sesame Oil for an Asian kick or even roasted red pepper paste) The options are endless!


Dandelion Pesto

I say this can be done with any herb or plant. Nuts usually taste great with any dark leafy plant, so it should work with dandelion leaves.

I’m sure with making this, you can use it as a sauce for pasta, or even as a dip

Dandelion Gratin

Whether it be the main ingredient or an extra ingredient Dandelion can be incorporated easily in foods like the Gratin.

You can even add them to fritters, or egg dishes such as omelet or scrambled eggs. The options once again are endless.

Dandelion Tea

Dandelion flowers, flower buds, roots or leaves can be used.

This is one of the easiest forms of obtaining the benefits of dandelion.

Great for weight loss or as a treatment for cholesterol & more.

Simply steep the part of the dandelion in boiled water & enjoy


Dandelion Coffee
Made by drying the roots then roasting them till fully brown. Ground up & steeped.e with constant mixing. Then it is dried & ground into a powder.

Dandelion Yogurt Salad

Since Dandelion is known to help absorption of calcium, then why not take advantage. Mix a little calcium with your dandelions to get the best out of both. 

I usually find dark leafy greens taste good with yogurt (definitely the homemade yogurt – sour & salty) not the sweet one.

My parents usually chop dandelion leaves & add Kishk to it. Kishk is of Lebanese & Syrian culture. Burgul (cracked wheat) is mixed with yogurt & whey & left to ferment for a week’s time with constant mixing. Then it is dried & ground into a powder.

Dandelion Infused Oil

So after seeing the turmeric infused oil, it’s quite simple to say that you can infuse oil with almost anything you’d like.  So why not do a dandelion infusion.

Benefits: massaging oil or oil rub to relieve aches and pains. Treat Skin irritations & inflammation. Use in salad dressings

Jar full of flowers
Cover or submerge with oil (almond, grape seed, olive or vegetable oil)
Add 1 or 2 ounces 100 proof vodka to prevent molding
Cover with cheesecloth & put in a warm sunny place.
Use in as early as 3 weeks

Last but not least, who can forget the best thing about a dandelion?

It’s its ability to keep you entertained, while allowing you to wish endlessly.

Just as my nephew calls them SPRINKLY WISHES - You make a wish, you blow & wishes fly away sprinkling the air!

Cough be Gone!

My need for heat has come again. I've just spent a wonderful month with my twin niece and nephew, along with my brother and sister in law. Now the fun is over, and back to work. Unfortunately, in this cold weather we all came down with a cough. So I decided to remedy all with a little bit of Apple cider vinegar and cayenne pepper. The worst thing about a cough is how it lingers, especially when you're trying to sleep. Throat tickles, and once you cough once, you just can't stop.

This remedy I find, beats halls, or any cough drop remedy. And the good part is, you're doing your body good, without taking in any strong synthetic formula. Even better, it helps build your immunity, gets your blood flowing and stabilizes your pH. Not only can this be a remedy for coughs, but it could be a weight loss solution.

This recipe calls for:

½ cup Apple Cider Vinegar
½ cup Water
1 tsp Cayenne Pepper
4 tsp Natural Honey

HOW TO:
Take one tablespoon on the onset of a cough attack. Moreover, take one spoon before bedtime.

I used to take 2 tablespoons at one time to speed the healing process. If you can tolerate the two spoons, you can by all means do that as well. Don't feel the need to restrict your intake of this in just the times I mentioned. You can take a spoon before or after meals - This can aid in digestion.

This Mix (minus the honey) is a great remedy for acid reflux or stomach ulcers as well. Both Apple cider vinegar and cayenne are helpful in the process.

Hot Leeky Quinoa

Spicy Quinoa & Leek Salad

Immune Boosting, Digestive clearing salad. Consists of quinoa boiled in chicken broth and slightly cooled. Chopped Leeks, green onions and Cucumbers were added to the mix, and finally topped off with an Olive-Oil & Mustard dressing.

I'm a fan for heat, and I try to include it in many of my meals to increase circulation and maintain heart health. I've added cubed Cayenne peppers to this dish to give it a little kick and add some health.

Wild Purple & Yellow Breakfast


 
Today I woke up with the thought of making breakfast. Initial thought was eggs, but I needed more oomph to the dish. Not having an idea as to what's in the fridge, I opened it to notice some boiled beets, & boiled quinoa.  I felt like I needed more ingredients, so I opened the vegetable drawer to find some yams and orange bell peppers.  All ingredients out of the fridge, now I needed to figure out what to make.



Ingredient List:

Eggs - Quinoa - Beets - Wild Rice - Flax Seed - Raw Almonds - Yam - Orange Bell Peppers - Garlic - Cayenne - Black Pepper - Olive Oil    AND    Blackberries


Wild Purple Quinoa 
I decided to mix the quinoa with the beets and add some fibre to it. I boiled some wild rice, and also ground flax seed and ground raw almond nuts.

Yam & Pepper Medley
For this, I chopped the yam and peppers, (boiled the yams) and then quickly stir fried the with some cayenne and black pepper & garlic. I had accidentally made too much wild rice for the quinoa, so I used the rest here.

Egg
Simple easy sunny side up egg, with a sprinkle of cayenne, blackpepper and salt.

Blackberry Beet juice
to top this all off I made a juice to drink later on as a mini snack. I say snack, because along with the beets and blackberries & orange juice, I added ground flax seed and ground raw almonds. These provide you with the nutrients, without altering the taste of the juice. Please note NO SUGAR was added. Blackberries alone give the sweet taste, and Beets are usually a source of sugar.. so don't add the sugar if you don't need it.

Base-ically Nuts!

Mini Nut Crackers with Spicy Chicken & Tomato Topping

Nuts are a wonderful addition to foods, when in search of a healthy diet. Fiber full - nuts can clean your digestive system, help in losing weight & add plenty of nutrients to the body

To prepare this recipe, you'll need a Handful each of walnuts, almonds, pinenuts, coconut powder, and dried figs. A tablespoon of Kalonji and 2 tablespoons of Flax seed all mixed together and ground into a powder.


I added some turmeric to the mix and a drop or 2 of water. Now u have a dough like paste.

Flatten in to crackers and bake until golden.




The crackers taste wonderful as is! Very similar to a nut filled granola bar. You can add a little bit of natural sweetener and you've got yourself a nut filled cookie. I didn't find the need for sugar (maybe because I added dried figs to the mix, which probably gave it it sweetness.)  You can change the recipe to your liking, add more of what you like, or eliminate what you don't like. Plus there are plenty of other nuts that weren't included here, that you can include if you like.




Or you can add any toppings you'd like.

Here I have stir fried chicken, with fresh tomatoes, fresh purple cabbage and fresh hot peppers. My spices for the chicken consisted of cayenne of course, and Cajun spices.

Benefits of Apple Cider Vinegar

Apple Cider Vinegar


It's probably the last thing one might think of regarding a healthy diet; but apple cider vinegar goes a long way in helping us to sustain our bodies. It's a great aid for weight loss, it improves heart health, eliminate heartburn or acid reflux and, even helps your liver.




Digestion, Weight-loss & ACV:

  • Apple cider vinegar helps control cravings by reducing ghrelin (the 'hunger' hormone that's produced due to an empty stomach). 
  • Keeps you feeling full for longer. By having the ability to delay the gastric emptying time, ACV allows you not to get hungry as quickly.  
  • ACV can also improve nutrient absorption - helps specific digestive enzymes and beneficial bacteria.
  • Helps in breaking down fat.
  • Fixes your pH balance.

  • The acetic acid present in apple cider vinegar may have the ability to protect our liver cells.

So here what else it can benefit you with:  cures for allergies (including pet, food and environmental), sinus infections, acne, high cholesterol, flu, chronic fatigue, candida, acid reflux, sore throats, contact dermatitis, arthritis, enhances appearance of complexion, eczema, and gout.

 HOW TO:

Salad Dressings, Marinades, Sauces, Dips, Juice, or take it as a shot of alcohol (with water).

DRINKS
Recipe 1: My top recipe is a couple tablespoons of apple cider vinegar in a cup of water
Recipe 2: Variation of recipe one is to do my D'tox drink: full lemon squeezed in cup of water with 2tbsp acv.
                   (you could add honey to taste, but it's better without - opt for natural sweeteners like stevia )
Recipe 3: ACV Cocktail - 1 tbsp  apple cider vinegar + 1 cup Sparkling water + ½tsp maple syrup





SALAD DRESSINGS

Recipe 1:  Mustard-Shallot Vinaigrette
1 tbsp minced shallot
1 teaspoon dry mustard
¼ teaspoon dry granulated garlic
¼ cup raw unfiltered apple cider vinegar
¾ cup extra virgin olive oil (more or less depending on how thick you make the vinaigrette)
sea salt and freshly ground pepper to taste 

Recipe 2:  Pizzeria Style Vinaigrette
¼ cup raw unfiltered apple cider vinegar
1 teaspoon dried oregano leaves
½ teaspoon dry granulated garlic
½ teaspoon dry mustard
¾ cup extra virgin olive oil – more or less as you like it
sea salt & freshly ground pepper to taste


Recipe 3: Sun Dried Tomato dressing
11/2 cup extra virgin olive oil
1/3 cup apple cider vinegar
1/2 lemon - juice
1/4 tsp sea salt
1 tsp honey
1 tsp mustard (powder or liquid)
2 tbsp mixed fresh or dried herbs (choose from basil, rosemary, dill, chives, dried onion bits, thyme, sage, parsley)
2 - 3 cloves fresh garlic chopped
5-6 drops of hot red pepper sauce (or to taste)
2 tbsp. sun dried tomatoes.
Optional:  add 2 tbsp. capers
 

Don't take Apple Cider Vinegar on it's own, the acid can be too harsh on the throat. Mixing & diluting it with a little bit of water is all you need.


Remember Apple Cider Vinegar has a strong taste, if you're not used to it yet, you could always start with a lower dosage, and work your way up.  If you can't go without adding some type of sweetener then opt for something natural. Please avoid the artificial sweeteners at all costs and if possible least for the white sugar last.

Benefits of Paprika

Paprika is a mild spice produced by grinding the fruits of the family of capsicum annuum plants which include red bell pepper and chili peppers. Paprika however has a very minimal dose of capsaisin, the compound that produces a sensation of burning. Capsaisin is one of the main compounds in the pepper family that provides health benefits - due to the lack of capsaisin in paprika, health benefits aren't as strong (as cayenne or chilli powder). If you can't stand the heat of cayenne pepper, then opt for Paprika - get the benefits without the heat.

Paprika, however, is also said to be extraordinarily high in Vitamin C and is rich in carotenids which are red and yellow pigments found in vegetables and herbs that impart health benefits.

It has anti-inflammatory properties that make it useful in medicine as a topical analgesic.
But while paprika abundantly contains these healthy constituents, it is not particularly known for its medicinal benefits as a stand-alone spice. However, it does contribute to an overall healthy diet when used as a seasoning in dishes.
The following are the paprika benefits that may be derived from consuming this herb:
  • Paprika helps to regulate blood pressure.
  • Paprika may help improve blood circulation.
  • Paprika may help assist digestion by normalizing acid in the stomach.

Benefits of Cayenne

Spicy is the new HOT!!


Cayenne - It contains trace minerals, high antioxidants, vitamins, and capsaicin. Also contains vitamins like vitamin C, E and carotinoids.

Capsaicin, found in cayenne can reduce platelets stickiness, increase your metabolism, stimulates the immune system and blood circulation. It can even kill harmful bacteria, germs, viruses, and other infections that may be hidden in our body.

  • Been used as a frost bite remedy. I have experimented in the crude cold winters of Canada, by putting a sprinkle on cayenne in my boots. Not only did they keep my feet warm.. at points I couldn't wait to get home to remove my shoes because I felt so much heat, it felt like a burning sensation.
  • I've also used cayenne poultice on stiff muscles.. neck strains are a nuisance especially when you need to move. A little bit of cayenne made into a paste using olive oil, and rubbed onto painful area. Please note: some muscle injuries get worse with heat applications - cayenne will only make it worse. (if your doctor says put an ice pack on it.. then NEVER use cayenne)
  • Superb for rebuilding the tissue in the stomach, facilitating healing with stomach and intestinal ulcers. Cayenne pepper for ulcers is not something most would have considered, and it still should be considered as a slight irritant especially when you have ulcers, but a little at a time NOT on an empty stomach and you should be fine. Remember if you're unsure, you can always start of with the tiniest of doses. 
  • And please remember NEVER to take it on an empty stomach.  I've experiment with cayenne and filled capsules with cayenne to get myself a bigger dose without tasting and feeling the heat on my tongue. Big mistake: I took the capsule on an empty stomach - and with in 20 minutes, there was an unpleasant party in my stomach - fire crackers and bombs. Too much cayenne can irritate the stomach - sometimes resulting in ulcers. It seems ironic that a substance that can heal ulcers can also cause them, but we always have to remember to Balance.  Getting too much of a Good thing, will not always result in a Good outcome.

Mustard seeds are grown in 3 main varieties white, black and brown. The black seeds are common in South Asia and the brown seeds are native to sub-Himalayan plains of North India.

SPROUT into Life

SPROUTING ... easily making and eating fresh, enzyme & nutrient rich food that can be so versatile.




Nutritious - seeds are packed with nutrients, SPROUTED seeds are even better!! During the sprouting process, present proteins, enzymes, vitamins and other nutrients increase whilst becoming more bio-available. At the same time toxins and enzyme inhibitors are reduced, increasing digestibility.




YOU'LL NEED:

- Seeds of choice (ie. mung bean, chick peas, lentils, fenugreek, alfalfa)
- Jar with cheese cloth & elastic band
- Water
- A minute of your time, daily for a span of a week




STEPS:
Day 1
- Put a handful of the seeds (mix of seeds can be used) in a jar.
- Fill Jar 3/4 way with water submerging seeds.
- cover with Cheese cloth & secure with elastic
- Soak for 24 hours
Day 2
- Drain seeds of water (this is where the cheese cloth is handy) & Rinse well
- Keep seeds drained of water
- Rest jar on it's side (avoid placing near stove or hot areas)
Day 3
- Rinse well, Drain and Rest jar on it's side
Day 4 & 5 & maybe 6
- Same process as day 3..
- You should start noticing the seeds sprout by now.
- Once fully sprouted (should take 6 days), you can place jar in fridge

Take note.. you can munch on these seeds at any time, even if they haven't fully sprouted.

USED FOR:
- snacking
- adding to sandwiches
- sprinkling on salads
- make Humus out of sprouted chickpeas
- substitute beans in your recipes with the 'sprouted' form of the bean
- the options are endless!!!
